Hiller's Buffalo Chili

makes 12 servings

Recipe Ingredients

1 1/2 lb. Hiller’s fresh ground Buffalo (or venison)
15 oz. can each: pinto, black and light red kidney beans, drained and rinsed
14 oz. can diced tomatoes
14 oz. can tomato sauce
1 small yellow onion, diced
1/2 bunch green onions, diced
2 teaspoons black pepper
1 teaspoon cayenne pepper
1/4 C. chili powder
1 tablespoon salt


Brown meat with diced yellow onion over low heat.  Buffalo is extremely lean so there will be no fat to drain.  Add all spices, diced tomatoes, tomato sauce, and beans.  Simmer over low heat for 30 minutes, top with green onions and serve.
