Tex Mex Turkey Chili

Recipe Ingredients

1 lb. ground dark meat turkey
1 pack of McCormick Tex Mex Chili seasoning (or make your own spice mix)
1/4 large sweet onion, chopped fine
1/2 each red and green pepper
2 cups canned chopped tomatoes
1-18 oz. can Progresso black beans
Cheddar cheese, if desired
Mashed sweet potatoes, if desired
1/8 cup vegetable oil

Directions

Heat oil in a heavy soup pot. Cook onions until softened, then add
turkey. While browning, break up meat with the back of a wooden
spoon. Add peppers, tomatoes and chili spice; simmer for 30 minutes.

Drain black beans; rinse and drain again before adding to the pot.
Simmer for an additional 15 minutes. Taste for seasoning. Serve with
cheddar cheese and a side of mashed sweet potatoes.
