Baked Eggplant Caponata

Recipe Ingredients

1 small eggplant, diced
1 small zucchini, diced
1 medium onion, diced
1 yellow bell pepper, diced
14 oz. can diced tomatoes
1/4 C. green olives, pitted
1 tablespoon capers
2 tablespoons red wine vinegar
2 tablespoons olive oil
salt and pepper to taste


Combine all ingredients and place in medium sized baking dish.  Bake at 400º F for approximately 30 minutes or until tender.
